Luís Pato

Known in the world wine scene as the "rebel producer" of Bairrada wine region, Luís Pato is an outstanding winemaker of Portugal, who started to produce wines in 1980. His first wine was a pure Baga from an exceptional quality and absolute rareness that is sought by appreciators as a treasure.

His father, João Pato, was the first bottler of Bairrada, after the classification as Demarcated Wine Region. From his father Luís inherited the non-conformism and the desire to make something new and to constantly innovate. While breaking conventions.

In 1985 begins 2 revolutions at Bairrada: destems Baga grapes and matures the wine in new French oak casks. In 1988 he plants Baga from ungrafted vines to understand pre-phyloxera wines and produces the first Vinhas Velhas’ wine from Portugal. In 2005, he makes his first wine with his daughter Filipa Pato, the FLP, using the cryo-extraction method. In 2009, Luís Pato made his first natural sweet wines (white, rosé and red), which he named Abafado Molecular.

The 60 hectares of vineyards are planted with Baga and Touriga Nacional (red varieties) as well as Maria Gomes, Bical, Bairrada's Cercial and Sercialinho (white varieties). The vineyards are distributed in two different types of soil: sandy and chalky-clay.

Also known as "Mr. Baga" or "Mr. Bairrada", Luís Pato became a world-acclaimed wine producer who has several prizes across his remarkable career. He has always valued the indigenous Bairrada vine varieties. And his unconditional love for the land has made all the difference.

Luís Pato wine cellar organises several activities, such as: visits to the personal wine cellar; wine tastings; regional lunches and fine-dining experiences paired with Luís Pato wines.

Filipa Pato & William Wouters are connected by the passion of wines and food. She is one of the most prestigious wine makers in Portugal and he is an awarded Belgian Chef and sommelier. They work exclusively with indigenous vine varieties of Bairrada wine region: Baga, Bical, Arinto, Cercial and Maria Gomes and their approach to wine-making is a chemical-free one. Wines without make-up.

They are driven by the philosophy of creating authentic wines that respect the laws of Nature. Wines with no chemical added. Wines full of soul and spirit of the place. The grapes are handled with extreme care, and there is little intervention in the winery, as well as a very strict monitoring of the grapes, so that they can express themselves fully.

Thanks to a never-ending research on local plants and on the surrounding forest, Filipa Pato uses 15 different plants in the bio-dynamic composts applied in the vines.

Guided visits must be scheduled in advance. This is certainly a unique opportunity to discover Bairrada, its soil, its micro-climate, exposure, indigenous vine varieties and bio-dynamic agriculture. At the Chef's table you will taste a 5-course menu perfectly matching the unique wines made by Filipa Pato, daughter of Luís Pato, the Baga rebel.

Quinta do Encontro

Wine region Bairrada has a distinguishing wine location, combining a design-oriented architecture and the wine cult: Quinta do Encontro, a project of Global Wines. This dazzling design winery evokes the structural drawing of a wine barrel, perfectly placed in the surrounding natural landscape. Wine passion and modern architecture hand-in-hand.

The challenging building was conceived by prestigious Portuguese architect Pedro Mateus. Surrounded by vineyards, Quinta do Encontro has several theme rooms, panoramic terrace offering a stunning view over the vineyards, a fantastic restaurant and a wine shop. It is located 30km away from Coimbra, 40 km away from Aveiro, 15 km away from Buçaco National Woods and 3,5km away from Curia.
